My grandmother makes the most fantastic strawberry rhubarb salsa. It is really simple and beautiful. She doesn’t have the recipe written down but I think its
bunch of rhubarb
bunch of strawberries
handful of sugar
squeeze of lemon
water
mint to garnish
Cook rhubarb and strawberries down in a pot with water. Simmer until rhubarb is soft and strawberries have broken down. Add in sugar and a squeeze of lemon. Let simmer for another 10 minutes. Serve in small dishes, garnished with a little extra sugar and mint. Enjoy!
